World-class mixologist to shake up Edinburgh’s New Town

A world-class Edinburgh mixologist has announced plans to launch the capital’s ‘best’ design-led cocktail bar on Hanover Street from Thursday 22nd July. 

 

Mike Lynch, 32, hopes to shake up Edinburgh’s bar scene with the opening of the 180 capacity Superico Bar and Lounge, which has already been shortlisted for the top ‘Bar, Club & Lounge’ accolade at the Hospitality Design Awards in New York this September.

 

The 19th-century Georgian building a former banking hall is a ‘fiesta for the eyes’, having been transformed into a Chilean-inspired, sun-drenched party palace by top Edinburgh-based design studio, JA!COCO!

 

Superico Bar and Lounge now resembles a Tamara de Lempicka painting, with Art-Deco-style shapes and jewel-like colours, including turquoise and bright yellow. There’s even a huge globe feature light that gives the illusion of a full moon.

Foodies, cocktail lovers and style gurus can look forward to a casual, but sophisticated venue to relax and socialise in the heart of the New Town.

 

Mike Lynch is a multi-award-winning mixologist and hospitality manager, having already won the title of ‘UK’s Best Cocktail Bar’ for Edinburgh’s Bramble Bar in 2019 and represented the bar in numerous industry events and takeovers in cities such as London, Copenhagen, New York and Denver in the United States. Mike was also part of the team that launched the Devil’s Advocate restaurant and bar in Edinburgh’s Old Town in 2013. 

 

With over 11 years’ international experience in specialist drinks and menu development, Mike has mastered his craft working with some of the world’s biggest whisky and gin brands, including Glenfiddich and Bombay Sapphire. Renowned for his cocktail expertise, Mike is sought after by drinks brands around the globe, with Hendricks Gin and Brooklyn Gin flying him to Brooklyn Bar Convent in New York on two separate occasions in the space of a year for his invaluable assistance.

 

At Superico, Mike plans to focus on Aperitivo-style drinks with a section for spritzes and Martini’s served straight from the freezer, as well as speciality wines from around the world served by the glass. 

 

Signature cocktails at Superico Bar and Lounge will include Padron Martini, Yuzu Spritz and Passiflora.

 

Commenting on the launch of Superico Bar and Lounge, Mike Lynch, said: 

 

“I’m really excited to be bringing something groundbreaking, fun and vibrant to Edinburgh’s bar scene with our unique Latin American flair.  

 

“Already shortlisted for an international design award in New York this September, we’re really lucky to have a stylish and beautiful venue where guests can enjoy some showstopping cocktails and bar snacks in a relaxed and sophisticated lounge bar setting.

 

“Later on in the evening, we’ll also be switching up the atmosphere by showcasing some great local DJ’s on our new sound system, including Edinburgh’s DJ Nasty P, who has supported Beyoncé.

 

“Superico has the ambition to quickly establish itself as Edinburgh’s best design-led cocktail bar and attract global recognition.”

 

Food lovers can also enjoy Superico Restaurant, which is located a few doors up from Superico Bar at 83 Hanover Street. Mike Lynch’s business partner and top Edinburgh chef, Scott Wyse, is now bringing his own brand of Latin flavour and style to the city. The style of the new Superico Restaurant menu is influenced by the big, bold flavours of South America, which Scott has experienced first-hand on his travels south of the equator in recent years. Signature South American dishes include ceviche and crudo inspired by Nikkei cuisine in Peru, beef cheek with mole from Oaxaca in Mexico and fresh mojo sauces inspired by Chile.

 

Scott has cooked for some of the world’s biggest music stars, including Taylor Swift, Demi Lovato, Metallica and Dire Straits’ Mark Knopler. He has also been inspired by his four-year stint heading up the catering for global music stars at the MTV Music Awards in London, Seville, Bilboa and Rotterdam. 

 

Open Wednesday to Saturday from 4pm to 1am, Superico Bar and Lounge plans to launch live DJ sessions at weekends, including Edinburgh’s DJ Nasty P, who has supported Beyoncé.

Superico Restaurant is open Wednesday to Friday from 5pm, Saturday and Sunday from 12pm. Aperitivo will be on offer all day Wednesday and Thursday and until 6pmevery other day the restaurant is open, including two small plates and a cocktail for £18.
